Several years back I had a blog called, Fit Minded Mom. It was my first ever blog and it was mostly health and fitness related which was a much larger part of my life back then. Not that health and fitness don’t play a big part now but just in a different way. Plus, it was the big “thing” with there being a thousand other bloggers writing about the same thing every single day. Yogurt bowls and chia seeds. I still follow some of these blogs and several of them were able to make the transition from “health and fitness” to “lifestyle” which is where my blog writing and reading love currently lies.
Over the years I have learned that my very favorite part of reading a blog is getting to know the person behind the screen. Yes, I realize that most(as I do) only share bits and pieces of their lives but having other like-minded people to relate to on a daily basis is nice.
One can blog about fitness or fashion or food all day long but if there isn’t an authentic personal feeling behind what that person is saying, I’m hitting unsubscribe!
Anyway, all of that to say that one part of my former blog that I do miss is the “What I Ate Wednesday” posts. Without fail, I’d log on and share with the web what I ate every
Tuesday Wednesday. The popularity of those posts have definitely fizzled out over the years but every now and again one will pop up in my feed and I get really excited to see what was on the menu for that day. Call it curious or call it nosy but I love seeing what other people are eating throughout their days. Besides, it sometimes helps to get me out of that “food rut” where I’m eating the same boring foods over and over again.

Breakfast always starts with a steamy cup of coffee. Well, my day starts that way at least. I like to drink my coffee before my kids get up for the day because it sets my mood. I crave that first sip and don’t want that peaceful moment interrupted by anyone. Now, halfway through the cup and I’m good to start talking!
I normally eat breakfast after I’ve dropped my big kids at school and had a moment to catch my breath from the hectic morning hustle. I don’t always slave over a stove this early in the morning but sometimes, a hot, protein filled breakfast just hits the spot. I should make eggs more often because in all honestly, this took five minutes and my toddler loved it, too!
Since I had a good-sized breakfast, I was quite satisfied throughout the morning and didn’t feel tempted to eat a morning snack. Instead, Lane and I ran some errands and played outside in the gorgeous weather!! Fall has finally arrived and I just hope it decides to stick around for a while.
Once we were home I made Lane a grilled cheese with some grapes as his side. He ate that outside on our patio in between going down the slide and “mowing” the grass. I stole a few bites of his sandwich because YUM, grilled cheese but they were tiny. Or so I’m telling myself!
After Lane went down for his nap, I quickly put together a taco salad using some leftover ground turkey from the night before. It was delicious! I included some spinach and baby kale, taco meat, guac, cheese, salsa and some crushed organic tortilla chips from Aldi, which by the way, we need to discuss very soon. This store has quickly become a favorite!!
I have a very bad(some might say, lol) but tasty habit of following up lunch with a little sweet treat. Since I have a stash of Reese’s pumpkins in my freezer I went for one of those.
Right after I finished inhaling that bad boy my husband surprised me by coming home from work a couple of hours early. For me, that meant NAP TIME!!!! I should have chosen to do something productive, like laundry but yeah, it didn’t happen. I’ve been going to bed late and getting up early for morning workouts so my body was begging me to be lazy. I was okay with that decision.
When I woke up an hour later, I felt famished. By the way, this happens almost every single time I take a nap. I wake up starving. It’s weird. Anyway, I grabbed a Lara Bar that I had in the pantry and that solved that little issue.
Not long after, my tummy started to feel a little “off” so I helped myself to a couple of ginger chews to see if it would settle it. Like magic, it did the trick! If you love ginger and “sticky” candy, I highly suggest you try these. They are so delicious and perfect for a little sweet and spicy snack or to help with car sickness, morning sickness or a random queasy tummy.
After Camryn and Liam came home from school we did the normal routine of, “I need a snack right this very second before I wither away and die” and putting away back packs and papers. I love seeing my kids after they’ve been gone all day but I’m not gonna lie, I dread it a little, too. No matter how prepared I am for it, it is always chaotic and at least one of my kids decides to be grumpy or clingy(I’m talking about you,Lane!)
We were all about taking advantage of the gorgeous weather so Lance and I strapped Lane into his stroller, put the dog on his leash and headed out for a walk around the block. It was just what I needed to work up an appetite for dinner. Which by the way was SO good. I mean, how can you go wrong with grilled steaks, grilled corn on the cob(my fave!!!) and roasted potatoes. Just go right ahead and ignore the lack of green on my plate. Apparently, we were all about the meat and taters last night!
Always keeping it classy with my paper plates. It’s so wasteful but it makes clean up a breeze.
And that wraps up a day of eating around here! I would say this is more or less typical with some days including an extra snack or two. Hey, sometimes a girl is hungry. And food is good. I mean, no arguments there, right?
